What's inside

The whole trail, from shot to supper

The book follows the order a real hunt does. Read it cover to cover before the season, or jump to the stage you're facing tonight.

  1. A tree stand in a sunlit pine forest

    Before the hunt

Gear, scouting and the fundamentals that put you in position for the right shot.

  2. A hunter scanning the forest with binoculars

    The hunt

Techniques for big game, small game and birds, with a focus on clean, ethical shots.

  3. A deer standing in a dry autumn field

    Field dressing

Getting the animal cleaned and cooled fast, the biggest single factor in how the meat tastes.

  4. A butcher cutting a bone-in rib roast

    Butchering

Break down your own animal, keep every usable cut, and skip the processing fee.

  5. Raw steaks portioned on a wooden board

    Storing

Packaging, labeling and freezing so nothing in the freezer goes to waste.

  6. Steaks searing in a cast-iron skillet

    Cooking

Recipes and techniques built for lean wild meat, not beef recipes with venison swapped in.

Field notes

Five habits for better wild game

A taste of the field-to-table mindset the book teaches.

  • Cool it fastHeat ruins meat. Field dress promptly and get the carcass cooling, especially on warm days.
  • Keep it clean and dryClean gloves, a sharp knife, and keep hair, dirt and water off the meat.
  • Trim the fat and silver skinWild game fat often carries the strong "gamey" flavor. Trim it before cooking.
  • Don't overcook lean cutsBackstrap and steaks shine at medium-rare. Save low and slow for the tough cuts.
  • Label every packageWrite the cut and date so the oldest meat gets cooked first.

About the author

Ethan Greenwood

Ethan Greenwood's love of hunting and the outdoors started in childhood, exploring the forests and hills of rural Vermont on his family's farm. He went on to study environmental science and wildlife management, then worked with communities in South America and Africa on sustainable farming and self-sufficient living.

Back in Vermont, he turned the family farm into a self-sufficient homestead that hosts hands-on workshops in hunting, wild game butchering and sustainable living. His books draw on decades of that practical experience.

His first book, No Grid Survival Project Bible, covers off-grid living and survival skills.
